This is a phenomenal book - there is a great tahini dressing recipe that is a go-to for large event salads. Chiffonade of kale goes a long way - and it's delicious (even for reluctant palates). I use this dressing and add apples, toasted sun flower seeds etc. Apple cider vinegar in the dressing breaks down the fiberous kale.
